3 ways to boost your fruit and veg intake

We all know that our diets should be rich in fruit and veg, but it can be challenging to ensure that we eat enough fresh produce – especially as we get older. Fortunately, it’s not difficult to boost your daily intake. Here are three easy ways to include these vitamin, mineral and antioxidant-rich foods in your diet.

1. Blitz up a morning smoothie

A smoothie is a healthy way to start the day, and you can experiment with different flavour combinations until you find one or two that work for you. Generally, most smoothies consist of a combination of plain yoghurt, fresh fruits like strawberries, banana or blueberries, and a handful of healthy nuts or seeds. If you’re feeling adventurous, you can even try adding a few pieces of avocado, which is rich in healthy fats and will give your smoothie a thick and creamy consistency.

2. Bake a tray of roasted veg

This is a really easy and convenient way to boost your veggie intake. Simply buy a selection of colourful veggies that you enjoy, chop them into pieces, sprinkle with olive oil and season, and bake in the oven. Then pack them away in the fridge once they’re cooled. You can them enjoy them in a variety of ways over the next few days – as additions to a salad, accompaniments to dinner, or as a healthy snack.

3. Make a pot of soup

Soups are easy to cook and make for quick, nutritious and affordable lunches and dinners, particularly if you cook large quantities and freeze for later use. Use a variety of vegetables to ensure your soup is packed with flavour and nutrition.

TIP: If you have a sweet tooth, consider swapping out treats like chocolates or desserts for fresh fruit. Rich in natural sugars and fibre, fruit should satisfy your sweet craving and help you reach your daily fruit and veg goal.
